A Sugar Free Valentine’s Day Treat: Apricot and Walnut Bars

Sugar Free Apricot and Walnut Flapjacks

Ingredients:

1 Cup of Oats
4 Oz Chopped Walnuts
6 Oz Dried Apricots, chopped
1/2 Cup Butter
1/2 Cup Soft Brown Sugar
2 Tablespoons Honey

Method:

1. Preheat the oven to 340F
2. Place the butter, soft brown sugar and honey in a small pan and heat gently until melted
3. Pour the oats, walnuts and apricots into a bowl and stir in the melted butter mixture
4. Transfer to a 20cm x 20cm greased and lined baking tray and bake for 35-40 mins
5. Remove and cool in tin, then slice into 16

Apricots are an excellent source of vitamin A (in the form of pro-vitamin A carotenoids) and a good source of vitamin C, copper, dietary fiber and potassium.
