Food for Thought: Cleansing Green Vegetable Broth

2 Tablespoons Olive Oil
1 Onion Finely, finely chopped
2 Garlic Cloves, roughly chopped
1 Celery Stick, chopped
1 Zuchinni, diced
1 Head of Broccoli, chopped into florets
3 cups of Vegetable Stock
1 Cup of Fresh Garden Peas
1 Cup of Broad Beans, shelled
1/2 Cup of Swiss Chard Leaves
Salt and Pepper to season


1. Heat the olive oil in a saucepan and cook the onion, garlic and celery until soft
2. Add the zucchini and broccoli and cook for 3 -5 minutes
3. Pour in the stock and bring to the boil before simmering for 3 minutes
4. Add the broad beans and peas, simmer for a 2 more minutes
5. Add the Swiss chard leaves and immediately take off the heat
6. Spoon into bowls and season
