Desert Island Dishes: Italian Coffee Granita

Coffee Granita

Inspired by our People Power Profile Guest – Pamela Collins, Lifestyle Director

Ingredients:

600ml Hot Strong Espresso Coffee
125g Caster Sugar
1 Tablespoon Icing Sugar
1/4 Teaspoon Ground Cinnamon
1/2 Teaspoon Vanilla Extract
300ml Double Cream

Method:

1. Place a shallow baking dish and four glasses into the freezer to cool
2. Stir the sugar into the coffee over a low heat until until fully dissolved and then leave to cool
3. Pour the coffee mixture into the cooled baking dish and place in the freezer
4. After 20 minutes remove from the freezer and stir in any ice crystals forming on the outer edge of the granita into the middle of the dish and repeat again 20 minutes later
5. Keep doing this until no liquid remains and you are left only with coffee crystals
Pour equal amounts of the granita into the chilled glasses and place in the fridge
6. Pour the cream into a bowl and add the cinnamon, vanilla and icing sugar and mix until you can form small peaks in the mixture
7. Spoon the cream onto the granita and serve
