Desert Island Dishes: Berry and Walnut Salad

Berry and Walnut Salad


2 Table Spoons Extra Virgin Olive Oil
4 Oz Soft Goats Cheese, softened
1 Teaspoon Honey
Handful of Mixed Salad Leaves
8 Strawberries, quartered
1/2 Cup Blueberries
1/4 Cup Walnuts, toasted and chopped
Salt and Pepper to Season


1. Toast the Walnuts in a dry frying pan
2. Chop the strawberries and add to a bowl
3. Add the honey, olive oil, salad leaves and blueberries to the bowl and toss gently
4. Add the tossed ingredients to a dish and break up the goats cheese onto it
5. Add the toasted walnuts and season with salt and pepper to taste
